Enjoy a Harvest recipe at home. Developed by the UFH team of Registered Dietitians, these energy bites make for a healthy and easy snack or dessert.

Coconut Lime Energy Bites 

Ingredients: 

  • 1 cup raw cashews 
  • 1 cup soft pitted Medjool dates (about 10 large dates) 
  • ½ cup fine shredded unsweetened coconut 
  • Juice & zest from 1 lime 

Directions: 

  1. Add all ingredients to a food processor and pulse until ingredients are well combined and sticky. Roll into 1-2 tablespoon balls using a cookie scoop.  
  1. Place in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months. 

Pumpkin Chocolate Chip Energy Bites 

Ingredients: 

  • 1 cup peanut butter 
  • ½ cup pumpkin purée 
  • 1 teaspoon vanilla extract 
  • ½ cup maple syrup 
  • 1 ½ cups rolled oats (+ ½ cup as needed for additional texture) 
  • ¼ cup chia seeds 
  • 1 tablespoon pumpkin pie spice 
  • ½ cup dark chocolate chips 

Directions: 

  1. Mix peanut butter, pumpkin purée, maple syrup, and vanilla extract in a mixing bowl until well combined. 
  1. Add rolled oats, chia seeds, chocolate chips, and pumpkin pie spice to the bowl. Thoroughly mix. Add more oats if mixture appears loose. 
  1. Place in the freezer for 15 minutes to chill. 
  1. Remove from freezer. Roll into 1-2 tablespoon balls using a cookie scoop. 
  1. Place in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months.

ANNAPOLIS, Md.–This Breast Cancer Awareness Month, TOUCH, The Black Breast Cancer Alliance (TOUCHBBCA) and Unite for HER are honored to announce Care for HER—a new campaign that seeks to educate about breast cancer health disparities and the impact of integrative care and culturally tailored nurse navigation while directly providing these services for free to Black Breast Cancer patients in the United States.

Launching in October, Care for HER is on a mission to navigate a better future for Black Breast Cancer patients by providing 24/7 personal nurse navigational support and integrative therapies and services at no personal cost.

“Patients enrolled in Care for HER will gain free access to integrative therapies and navigation, helping them manage side effects and symptoms, adhere to treatments better, and improve their quality of life. Together, we can make a difference in the lives of Black breast cancer patients.”

According to the American Cancer Society, Black women are 41% more likely to die of breast cancer than white women and have the lowest 5-year survival rate of any race or ethnicity. Black Breast Cancer is a unique disease and through this campaign, Care for Her will be one resource for our community to receive specialized care.

“Awareness is not enough. The current state of Black Breast Cancer demands action,” says Ricki Fairley, CEO and Co-Founder of TOUCHBBCA. “So this October, we are offering nurse navigation—led by a 24-year Black breast cancer survivor and nurse—in tandem with Unite for HER’s incredible suite of integrative services, all for free. Care for HER will help Black women navigate the complexities of a breast cancer diagnosis, from side effects to treatment barriers to emotional support. Our message to Black breast cancer patients is simple: you are not alone.”

Care for HER is an awareness campaign with real impact, focusing on enrolling Black breast cancer patients in Philadelphia, Washington, D.C. and Raleigh-Durham. The program will extend into additional cities in October 2025.

The Care for HER program is presented by Daiichi-Sankyo and AstraZeneca. Additional funds received during October will provide enrolled patients with free integrative therapies, services, and personal 24/7 nurse navigational support at no personal cost.

“Our vision is that every Black individual diagnosed with breast cancer will feel the support of a loving community, and will have access to comprehensive integrative oncology support, education, services, and tools that enrich their health and well-being,” says Sue Weldon, CEO and Founder of Unite for HER. “Patients enrolled in Care for HER will gain free access to integrative therapies and navigation, helping them manage side effects and symptoms, adhere to treatments better, and improve their quality of life. Together, we can make a difference in the lives of Black breast cancer patients.”

The general public can also join Unite for HER and TOUCHBBCA all October long on social media as we talk about integrative care and nurse navigation and hear from real patients enrolled in the program. Throughout the month, we’ll be highlighting the personal impact on how nurse navigation and integrative care allowed Care for HER participants to mitigate side effects and symptoms, better manage prescriptions, and have better outcomes.

Alison Marcelli is a dedicated weekly volunteer who is especially crucial in preparing the weekly shipment of care boxes for patients nationwide. She began her service with Unite for Her in Fall of 2021. Alison is an amazing supporter and spokesperson for UFH at various outreach events and functions and is former program member. Alison previously spoke about her experience in the 2023 Bloom Fashion Show, and her kind heart and caring spirit shines through in all that she does.

Student Spirit of Service Award: Caroline Straw and West Chester University Abbé Society

The Abbe Society is an organization of female students that commits itself to the service of others on campus and throughout the surrounding community.  Under past and current leadership, Abbe Society members have supported Unite for HER on a weekly basis throughout the academic year.  Various society members have served UFH by performing different tasks that enable UFH to ship Wellness Care boxes and educational materials to breast and ovarian cancer patients.  The members of AbbeSociety never feel a task is too small or too challenging.  Over the past several years, students arrive reliably at the Unite for HER office with positive energy and move quickly to the task at hand.  They have assembled wellness care boxes, replenished materials for the care boxes, organized our storage area, move heavy cases from pallets to storage shelves, and a variety of other tasks.  They have volunteered at UFH key fundraising events such as the 5K and Pink Invitational.

Whether you choose to purchase organic or conventional produce, it’s important to give your seasonal goods a wash before you consume them. This helps to remove any bacteria, dirt, and residue that may be left on the exterior. Even if you don’t plan to eat the exterior of your produce (like a watermelon, for example) it’s good practice to give everything a rinse. That way, in case you chop through the skin, you’re still avoiding exposure to bacteria that may live on the surface!

Recipe:

Mix a solution of 1 cup distilled white vinegar to 3 cups water.
Optional: Add 1 tablespoon of lemon juice.

How to Wash Different Produce:

  • Hard-Skinned Produce: Mix your solution in a spray bottle. Place produce in a colander in the sink. Spray liberally with the mixture, then let sit for 2-5 minutes. Rinse thoroughly with cool water, using a vegetable scrub brush on thicker skinned produce. Pat dry with paper towels.
  • Soft-Skinned Produce: Mix your solution in a large bowl. Add produce and soak for up to 10 minutes. Drain and rinse well with cold water. Pat dry with paper towels.
  • Leafy Greens: Mix your solution. Place greens in a bowl or salad spinner and fill with solution. Let greens sit in the solution for 2-5 minutes, then remove. Rinse thoroughly with cold water. Dry with paper towels or spin. Use right away or wrap in damp paper towels, stored in a plastic bag.

Grant will provide free integrative resources  to underserved patients in Pennsylvania  

West Chester, PA (August 7, 2024)— The Foxwynd Foundation awarded a $50,000 grant to nonprofit organization Unite for HER  to provide integrative therapies and supportive services for breast and ovarian cancer patients in Pennsylvania.

“The impact of integrative care on patient outcomes is profound,” said Susan Weldon, founder and CEO of Unite for HER. “We are so grateful for the support of the Foxwynd Foundation to provide these life-changing resources to patients in underserved areas across the commonwealth.  This grant will provide 100 patients with immediate access to therapies like acupuncture, nutrition services, Reiki, yoga, and more, at no personal cost.”

Unite for HER’s integrative wellness programs began in 2009, providing integrative therapies and supportive services to breast cancer patients in the Philadelphia region. Today, the national nonprofit supports over 7,400 breast and ovarian cancer patients annually,  providing direct services at no personal cost. The Foxwynd Foundation DAF funded the Foxwynd Foundation’s generous donation to Unite for HER.

“We are committed to supporting initiatives that enhance community health and well-being,” said Pamela Villagra, Executive Director of the Foxwynd Foundation. “This grant award helps to ensure that all breast and ovarian cancer patients in Pennsylvania have the opportunity to benefit from integrative care.”

Cucumber Rosemary Smash

Ingredients

Cucumber Rosemary Smash

  • 1 Cucumber cubed ½”
  • 1.5 oz Rosemary Syrup*
  • 1.5 oz fresh lemon juice
  • Tonic water
  • Fresh black pepper
  • 1 sprig of rosemary and lemon wheel/wedge for garnish

Rosemary Syrup*

  • 1 cup sugar
  • 1 cup water
  • 3-5 sprigs of rosemary

Instructions

Cucumber Rosemary Smash

  • In a strainer, muddle 5 pieces of cucumber.
  • Add ice and rosemary syrup .
  • Add fresh lemon juice to the mixture.
  • Shake well and strain over ice in a glass. Top with tonic (recommend a natural, smaller batch tonic like Fever Tree).
  • Add 2 turns fresh black pepper on top.
  • Garnish with a torched rosemary sprig (light a small rosemary sprig on fire then immediately blow out so it smolders) and a lemon wheel/wedge.

Rosemary Syrup

  • For rosemary syrup, in a small sauce pan over medium heat, stir water and sugar until sugar is dissolved.
  • Remove from heat. Add sprigs of rosemary and let steep until it reaches room temperature.
  • Leave rosemary in the mixture and refrigerate overnight, then strain.
  • Store in the refrigerator for up to 1 week.

Dr. Roseanne Gichuru and Dr. Monique Gary joined us to discuss the topic of body image challenges during and after cancer treatment. These are their answers to your follow-up questions:

“Do doctors still shy away from estrogen based creams for the dryness? My understanding is that the estrogen is not systemically absorbed. So we should be able to use these.”

From a generalist position, vaginal estrogen is ok for patients on tamoxifen. For women on AI, the decision to use is based on a discussion between the patient and care team  oncology/breast surgeon etc. Breast data shows it may be used as a last resort.

 

“I have a lot of concerns about loss of feeling and sensation with mastectomy. Can you comment on this?”

Loss of sensation is quite common post mastectomy. Studies show numbness or loss of sensation is more likely to decrease the further out from surgery one is and as nerve tissue regenerates. However, it may not fully return to pre surgery levels.

 

“Is breast reconstruction not recommended for someone that has Stage 4 Breast Cancer? If not, what do you recommend for breast that is sagging and shrinking in bra size?”

There is mixed data on reconstruction for stage 4. This maybe determined on a patient  by patient basis. Getting resized for bras is a good place to start. These services are offered at many department stores for free. Using cupped bras and or mastectomy bras may also be helpful.

 

“Advice for preparing for mastectomy mentally and emotionally? Preparing for loss of feeling, the big change, etc.”

Briefly – optimizing mental and emotional health, finding or aggregating a support team.  Physical exercise and PT will help.

 

“When on hormonal therapy (Tamoxifen & Lupron) that will eventually go to an AI, how do you get your libido and sexual desire back?”

Recognize that sexual wellness is multifaceted so managing mental, physical, nutrition, rest, hydration, etc then start to think about what used to turn you on and start a plan to get back to that. Sometimes low confidence interferes with libido too.

Engage the partner in the journey as well. Just as the woman is navigating this stage, so is the partner. It is a time of exploration and discovery for both parties.

 

“What if your surgeon and you don’t see eye to eye on where scars will be? I don’t feel like my doctors listen to me and what I want for my body and focus too much on the medical side only.”

A candid conversation with the surgical team regarding your concerns is a good place to start. Writing down your questions/concerns beforehand and taking a friend with you to the appointment is helpful. Discussing the anticipated consequences of your concerns is also  an important part of the conversation with the team. This conversation may need to happen over several appointments.

 

“I would like information on side effects or risks for having my implants removed?  I had a second surgery for capsular contraction but it came right back.  This is my second time with breast cancer so I had prior radiation. I am so uncomfortable all the time.”

Risks – bleeding, infection, risks associated with receiving anesthesia, seroma and hematoma formation, return to OR for additional surgery, pain, numbness, increased scarring, poor healing and cosmesis, and changes in cup size.

Dear Unite for HER Community,

Today, May the 4th, holds a very special place in my heart, I wanted to take this moment to share it with those I love and hold dear, including each member of our Unite for HER community.

Today marks my 20th year of being cancer-free, and I am so grateful.

I am immensely thankful to be here, serving in my role at Unite for HER, advocating for those in need. I remember all too well, vividly recalling the days when I longed to see someone who was one year, five years, ten years, fifteen years, and twenty years post-cancer. Their stories gave me hope and strength. Now, being that voice of hope as 20 years out for the thousands we serve at Unite for HER, fills my heart in ways I can truly not put into words for I also know that is not the case for many that we serve.

I am deeply honored and grateful to lead in this role at Unite for HER, across the country, alongside our remarkable staff, board, and volunteers. Together, we are improving outcomes and assisting in managing arduous side effects and symptoms, both emotionally and physically.

I often tell my family the importance of “marking the day”, taking time to pause, reflect, and cherish our accomplishments and goals. Sometimes, we rush through life so quickly that we forget to pause, reflect, and celebrate these milestones that shape our lives.

So today, I am taking my own advice, and marking this day with all of you. I am deeply honored to lead the Unite for HER community and look forward to all we will achieve together in the years to come.

Air Fryer Salmon

Ingredients

  • Salmon makes 2 - 5-8oz filets
  • tablespoons honey
  • 2 tablespoons dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 teaspoon lemon
  • Salt and pepper

Instructions

  • Combine the sauce ingredients. Marinate the salmon in two-thirds (2/3) of the sauce for 30 minutes or toss the salmon fillets in the sauce until fully covered.
  • Preheat to 400°F and place the salmon fillets in the air fryer. Baste the remaining marinade onto the salmon fillets.
  • Air fry for 7-8 minutes, depending on the thickness of the salmon.
  • Dish and serve hot drizzled with the remaining sauce.

Notes

NOTE: This recipe assumes you have an air fryer with a preheat option. If you do not,
run your air fryer for 5 minutes at 400°F to preheat it evenly before adding in the
salmon and following the recommended recipe time.

Quinoa Broccoli Slaw

Ingredients

For broccoli slaw:

  • ¾ cup uncooked quinoa
  • 1 ½ cup water
  • ½ cup slivered almonds
  • 2-3 medium broccoli heads (or 16 oz
  • shredded broccoli)
  • 1/3 cup chopped basil

For dressing:

  • ½ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 2 cloves garlic pressed or minced
  • ½ teaspoon sea salt

Instructions

  • First, rinse the quinoa in a fine mesh colander under running water. In a medium-sized pot, combine the rinsed quinoa and 1 ½ cups water. Bring the mixture to a gentle boil over medium heat, then reduce the heat to medium-low and gently simmer the quinoa until it has absorbed all of the water. Remove the quinoa from heat, cover the pot and let it rest for 5 minutes. Uncover the pot and fluff the quinoa with a fork. Set it aside to cool.
  • Meanwhile, toast the almonds: In a small skillet over medium heat, toast the almonds, stirring frequently, until they are fragrant and starting to turn golden on the edges, about 5 to 7 minutes. Transfer to a large serving bowl to cool.
  • To prepare the broccoli (if you’re not using prepared broccoli slaw), trim off any brown bits from the florets and stems, then slice the florets off the stems into manageable pieces. Use a paring knife to peel off the tough, woody perimeter of the broccoli stems and then discard those pieces. Now you can feed the broccoli florets through your food processor using the slicing blade, then switch to the grating blade to shred the stems. Alternatively, you can shred the broccoli with a mandoline or by hand with a sharp knife.
  • Combine all of the dressing ingredients in a liquid measuring cup and whisk until emulsified. The dressing should be pleasantly tangy and pack a punch. If it’s overwhelmingly acidic, add a little more honey to balance out the flavors. If it needs more kick, add a bit more mustard or lemon juice.
  • Add the shredded broccoli slaw, cooked quinoa and chopped basil to your large serving bowl. Pour the dressing over the mixture and toss until well mixed. Let the slaw rest for about 20 minutes to let the flavors meld.

Parmesan Zucchini and Corn

Ingredients

  • 1 cup canned or frozen corn
  • 4 zucchini
  • ½ cup parmesan
  • 1 TBSP olive oil
  • Salt pepper, Italian blend

Instructions

  • Heat olive oil in a large cast iron skillet over medium high heat. Add garlic, and cook, stirring frequently, until fragrant, about 1 minute.
  • Stir in zucchini, corn, basil, oregano and thyme. Cook, stirring occasionally, until zucchini is tender and cooked through, about 4-5 minutes; season with salt and pepper, to taste.
  • Stir in lime juice and cilantro.
  • Serve immediately, topped with Parmesan.
