Cinnamon Stuffed Peaches

Equipment

  • Knife
  • Cutting board
  • Baking sheet
  • Measuring cups/spoons
  • Small bowl
  • Spoon
  • Blender (optional)

Ingredients
  

  • 2 large peaches
  • 1 teaspoon cinnamon divided
  • 1 cup small curd cottage cheese
  • 2 tablespoons grade A maple syrup or raw honey
  • ¼ cup walnuts chopped

Instructions
 

  • Heat oven to 425°F. Prepare a baking sheet with aluminum foil or a silicone baking mat.
  • Slice your peaches in half. Remove the pit in the center. Place halves on baking sheet, cut side up. Sprinkle halves with ½ teaspoon cinnamon.
  • Bake peach halves for 10-20 minutes, until softened.
  • Stir cottage cheese, maple syrup, and remaining cinnamon in a small bowl while peaches bake. Alternatively, blend the ingredients for a smoother texture.
  • Remove peaches from the oven and cool slightly. Spoon ¼ of the mixture into each peach half. Sprinkle with 1 tablespoon walnuts each just before eating.
  • Store in the fridge for 3-4 days.
