Coconut Lime Energy Bites

Ingredients:
- 1 cup raw cashews
- 1 cup soft pitted Medjool dates (about 10 large dates)
- ½ cup fine shredded unsweetened coconut
- Juice & zest from 1 lime
Directions:
- Add all ingredients to a food processor and pulse until ingredients are well combined and sticky. Roll into 1-2 tablespoon balls using a cookie scoop.
- Place in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months.
Pumpkin Chocolate Chip Energy Bites
Ingredients:
- 1 cup peanut butter
- ½ cup pumpkin purée
- 1 teaspoon vanilla extract
- ½ cup maple syrup
- 1 ½ cups rolled oats (+ ½ cup as needed for additional texture)
- ¼ cup chia seeds
- 1 tablespoon pumpkin pie spice
- ½ cup dark chocolate chips
Directions:
- Mix peanut butter, pumpkin purée, maple syrup, and vanilla extract in a mixing bowl until well combined.
- Add rolled oats, chia seeds, chocolate chips, and pumpkin pie spice to the bowl. Thoroughly mix. Add more oats if mixture appears loose.
- Place in the freezer for 15 minutes to chill.
- Remove from freezer. Roll into 1-2 tablespoon balls using a cookie scoop.
- Place in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months.
