Coconut Lime Energy Bites 

Ingredients: 

  • 1 cup raw cashews 
  • 1 cup soft pitted Medjool dates (about 10 large dates) 
  • ½ cup fine shredded unsweetened coconut 
  • Juice & zest from 1 lime 

Directions: 

  1. Add all ingredients to a food processor and pulse until ingredients are well combined and sticky. Roll into 1-2 tablespoon balls using a cookie scoop.  
  1. Place in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months. 

Pumpkin Chocolate Chip Energy Bites 

Ingredients: 

  • 1 cup peanut butter 
  • ½ cup pumpkin purée 
  • 1 teaspoon vanilla extract 
  • ½ cup maple syrup 
  • 1 ½ cups rolled oats (+ ½ cup as needed for additional texture) 
  • ¼ cup chia seeds 
  • 1 tablespoon pumpkin pie spice 
  • ½ cup dark chocolate chips 

Directions: 

  1. Mix peanut butter, pumpkin purée, maple syrup, and vanilla extract in a mixing bowl until well combined. 
  1. Add rolled oats, chia seeds, chocolate chips, and pumpkin pie spice to the bowl. Thoroughly mix. Add more oats if mixture appears loose. 
  1. Place in the freezer for 15 minutes to chill. 
  1. Remove from freezer. Roll into 1-2 tablespoon balls using a cookie scoop. 
  1. Place in an airtight container in the fridge for up to 1 week, or in the freezer for up to 3 months.
