Roasted Sweet Potatoes with Honey and Cinnamon

Equipment

  • Sharp knife
  • Plastic baggie
  • Baking sheet
  • Parchment paper
  • Serving bowl
  • Measuring cups/spoons

Ingredients
  

  • 3 large sweet potatoes -washed peeled, and cubed
  • ¼ cup honey
  • ¼ cup olive oil
  • 2 teaspoons cinnamon
  • Dash pumpkin pie spice and nutmeg
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F.
  • Prepare a large baking sheet with parchment paper.
  • Put the cubed sweet potatoes in a large plastic baggie and add honey, olive oil, and spices. Seal baggie and shake it up until the potatoes are coated nicely.
  • Spread evenly on the baking sheet.
  • Bake in the oven for 30 minutes or until they are tender. Place in serving bowl, and drizzle with a little more olive oil for a finishing look.
